Award-winning Idaho Grilled Cheese restaurant opens in Boise
Just in time for comfort food season, Boise has a new destination for gooey grilled cheese sandwiches, scorching hot soup and more!
We don’t know about you, but ever since we heard that an award-winning restaurant specializing in “extreme” grilled cheeses was planning a location where Mexican restaurant Los Mariachi on Fairview burned down in 2019, we’ve been watching this site every day. time we passed it.
The new restaurant is not a national chain. It’s a concept born and raised in Idaho (or should we say bread) in Coeur d’Alene. In April, Meltz Extreme officially announced that after 10 years in northern Idaho, they were ready to expand to Treasure Valley. The Boise location is the second brick-and-mortar location for the cheese restaurant.
Originally slated to open this summer, the new Boise location was finally able to hold a preview event last Thursday night. The preview party was slammed and gave their new staff a chance to see what it was like to work under fire. After taking a look at the course of the evening and adjusting a few elements, the restaurant is ready to welcome customers during lunch hours, Monday to Saturday from 11am to 3pm. You’ll find them at 6565 W Fairview Avenue.
The delicious origin story of Meltz Extreme
Meltz’s original location opened in 2012 after two friends sat down to discuss becoming business partners over lunch. According to the Meltz website, they loved comfort food but didn’t want it to get boring. They didn’t want to call their food “gourmet” because it seemed a bit too fancy for their part of the country.
Co-owner Matt blurted out the word “extreme” during a brainstorming session and the pair ran with it. From his experience in the industry, Chef Joe McCarthy knew that cheese was the perfect backdrop to work with and that grilled cheese sandwiches offered endless possibilities for unique combinations and flavors. Just like that, Meltz was born!
The Coeur d’Alene location has racked up many accolades, including Best Grilled Cheese in Idaho, Best Mac and Cheese in Idaho, Best Sandwich Shop in Idaho, and one of the 33 Best Sandwich Shops in Idaho. ‘America. Two of their sandwiches even won first place at the 2013 and 2014 National Grilled Cheese Invitationals.

Our first taste of Meltz
We were lucky enough to score an invite and can say it was absolutely everything we dreamed of.
Personally, this author has been curious about the Cheezy Caprese sandwich ever since he wrote his first article on Meltz a few months ago. During preview night, it was one of the sandwiches in the “Uncommon” section of the menu. It mixes mozzarella, fontina, grated asiago, grilled tomato, pesto and a balsamic reduction.
Is it a messy sandwich? Yes. I wish I had taken a wet nap in my purse because it was so sticky. Will it make your soul happy from within? Yes too. It pairs well with a cup of their Creamy Tomato Basil Bisque. I loved that the soup had grated Parmesan cheese in it. The more cheese, the better!
My only regret ? The fact that we had chosen the last seats for the evening, so I was starving when we arrived. When they called our number, I devoured my half sandwich without thinking to take a picture of it. Fortunately, our friends, the Crossley family, had a little more composure. James and Dacia sent us photos of the Cubano, Cheezy Caprese, tomato soup, and mac and cheese their family tasted.
James said the half-sandwich cubano was bigger than he expected. He also liked the breadcrumbs and the hint of spice in the mac and cheese. (Looks like the couple’s daughter did too!)
So what’s on the Meltz Extreme menu?
The Boise site is still working on finishing up its website where it will post its current menu, but many of the sandwiches people have come to know and love at Coeur d’Alene were on the one served at preview night. . The Pepperosa, Simpleton, Cheezy Caprese, Cubano and Oinker are a couple to remember.

Couer d’Alene’s Meltz Extreme Grilled Cheese is expanding to Boise this summer! It’s their sandwiches that we can’t wait to try. They also allow customers to create their own sandwiches, so if there’s a combination you don’t see here, they can probably pull it off!
In addition to sandwiches, soups and mac and cheese, Meltz also makes its own chips, dips and salads. The Boise location offered a selection of local canned beers from Mother Earth and Sockeye.
